Ten years ago, people often asked me why I started Peijie.

The answer was simple: passion. With nothing more than a family recipe passed down from my grandmother and a heart full of determination, we set up a single table in a small shop at Jiefangbei, Chongqing. That was the very beginning of Peijie Hotpot.
In that tiny shop, we witnessed people lining up until midnight just to enjoy hotpot. We saw travelers dragging their suitcases straight from the train station at 3 a.m., insisting on having one last taste of Chongqing before leaving. That little shop became the backdrop for countless important moments in people’s lives—and in return, those moments became part of Peijie’s story.

 

From eleven tables to nearly a thousand today, Peijie has grown together with the people who love it. What has never changed is our commitment:

We preserve the craftsmanship of stir-frying spices by hand, uphold the century-old family recipe without additives, and honor the words of my grandmother—“never lose the soul of old hotpot.”
