From Chongqing’s Mountains to Amsterdam’s Tables — The Local Heritage Project

Every ingredient tells a story: of patience, land, and time.

At Peijie Hotpot, we believe food connects people — across tables, cities, and generations. This belief gave life to our Local Treasures Project, a journey through Chongqing’s 38 districts to rediscover regional ingredients and traditional craftsmanship.

A Journey Through the Heart of Chongqing

Our team travelled through mountain towns, river valleys, and local markets — meeting farmers, artisans, and small producers.

From the golden bamboo shoots of Jinfo Mountain to the handcrafted sausages of Wulong, each discovery carried stories of patience, skill, and family tradition. Every ingredient tells us where it came from — its soil, its season, its people.

Heritage Flavors We Fell in Love With

Meishan Fermented Pickles (Since 1902)
Tangy, bright, and alive. Grown and fermented by time itself, these pickles bring a gentle sour note that balances the heat of our broth. One taste, and you’re tasting a century of craft.

Premium Local Meats
We work directly with regional farms to source beef, lamb, and pork at their freshest. A strict cold chain keeps every cut tender and full of flavor — honest meat, handled with care.

Handmade Condiments & Fresh Vegetables
From fiery chili oil to smooth sesame paste, our condiments are made in small batches, just like back home. Add crisp local vegetables, and you have the soul of a true Chongqing hotpot — rich, balanced, and deeply satisfying.

Sustainability & Respect for Origin

Behind every dish is a producer we know by name. We trace where our ingredients come from and share their stories with our diners.

It’s our way of respecting both the land and the people who keep tradition alive.

More Than a Meal

Hotpot is about sharing — the laughter around the table, the bubbling broth in the middle, and the warmth that spreads between friends.

Our menu, shaped by the Local Treasures Project, invites you to explore the real flavors of Chongqing — spicy, soulful, and full of life.

When you dip a bamboo shoot, sausage, or pickle into our broth, you’re tasting more than flavor — you’re tasting Chongqing itself.
Every bite carries its own story: of mountains, rivers, and the people who make our food with care.
